Oven-Roasted Spicy Beef Petite Roast

| Ingredients: |

1 |

beef shoulder Petite Tenders (8-10 ounces each) |
|
1-1/2 |
|
tablespoons Spicy Three-Pepper Rub |
|
|
Spicy Three-Pepper Rub |
|
2 |
|
teaspoons each, salt, dried oregano leaves, sweet paprika, and dried thyme leaves |
|
1 |
|
teaspoon each, garlic powder, onion powder, ground black powder, and ground white pepper |

teaspoon ground red pepper |

Instructions: |
|

For the rub, combine all ingredients and store in airtight container. Shake well before using to blend. Makes about 1/4 cup. |

For the roast, heat oven to 425ºF. Press pepper rub evenly onto all surfaces of the beef roast. |

|
Place roasts on rack in shallow roasting pan. Do not add water or cover. Roast in 425ºF oven 20 to 25 minutes for medium rare to medium doneness. Remove from oven when instant-read thermometer inserted into center of thickest part of roast registers 145ºF for medium rare or 160ºF for medium doneness. Let stand 5 minutes before carving. |
