Makes 4 Servings


1 lb 80/20 ground beef

4 pretzel buns

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

½ bottle beer (I used Sam Adams Summer Ale)

4 ounces sharp cheddar, shredded

½ teaspoon Dijon mustard

½ teaspoon hot sauce

French’s crispy onions


  1. Melt butter in a small saucepan over medium heat. Whisk in flour until a smooth paste forms. Pour in beer, whisking constantly. Add cheese, a little at a time, whisking until a smooth sauce forms.

  2. Remove from heat and stir in mustard and hot sauce.

  3. Form ground beef into four even patties. Place patties on grid over medium, ash covered coals. Grill, covered 8 to 10 minutes (over medium heat on preheated gas grill, covered, 7 to 9 minutes) until instant-read thermometer inserted horizontally into center registers 160°F, turning occasionally.

  4. Place burger patty on pretzel bun. Top with beer cheese and crispy onions. Enjoy!
