These Muffin Tin Meatloaves are the perfect family meal! Toddlers will love the fun size, babies will love the soft flavorful beef, and parents will love the wholesome ingredients.
2 lbs ground beef sirloin (90/10)
3/4 c dry oats
1 egg
1/2 small onion, minced or shredded
1/2 c shredded carrot
1 small green pepper, finely diced or shredded
2 cloves garlic, minced
1 tbsp worcestershire
3/4 c. ketchup, divided
1/2 tsp salt
1/2 tsp pepper
1. Preheat oven to 350F and spray a 12-count muffin tin with cooking spray. Set aside.
2. In a large bowl mix together the beef, oats, egg, vegetables, seasonings, and 1/2 cup of the ketchup. Divide the mixture between the 12 muffin cups. Use the remaining 1/4 cup of ketchup to top the meatloaves (1 tsp per loaf).
3. Place muffin tin on a cookie sheet to catch any drips. Bake for 35-40 minutes until beef reaches an internal temp of 160F. Remove from the oven and allow to sit for 5 minutes. Transfer meatloaves to a paper towel lined plate to drain any excess grease.
